beef short rib wet marinade (for 3-5lbs of meat)
-juice and zest of 6 limes.
-2 small red chillies, chopped.
-1 large thai green chilli, chopped.
-1/2 yellow onion, minced.
-4-6 shallots, minced.
-6 cloves soy soaked garlic (see the garlic soy below)
-1 cup dark soy sauce
-1 cup lo-sodium soy sauce
-1 cup garlic soy (fresh garlic, peeled and washed, which have been steeping in lo-sodium soy sauce for about a month)
-1/2 cup olive oil
-1/2 cup of chinese shochu
-2 tablespoons sugar.
marinade refrigerated for atleast 6-8hrs. overnight, for best results.
beef short rib dry rub (again, for 3-5 lbs of meat)
in equal parts measured in tablespoons:
-cumin powder
-ground black pepper
-sugar
-seasalt
-chayenne powder
-garlic powder
-onion powder
-corn starch
-paprika powder
-celery salt
thoroughly mix the dry ingredient together, and transfer to a medium-holed shaker. and sprinkle generously on to the meat. most of the rub will come off when you grill or pan fry.
again, let the rub set for 6-8hrs, refrigerated. and overnight, for best results.
